I love couscous more than rice. One big reason is you can easily turn it into breakfast. Couscous has some health benefits but still not a superfood, it should only be eaten in moderation.
Adds a bit more flavor to this messy scramble. This dish will take a little longer time but it’s perfect before a long hike or workout. total time 20-25 minutes
½ cup hash browns or small cut up potatoes (if you use a small potato it will take longer to make)
2 cups spinach
¼ of an onion (chopped)
⅓ cup of cooked couscous
Start with a large saucepan and add oil I like to use Grapeseed oil. Turn your stovetop to medium heat.
Add in your hash browns and make them flat and all together. Cook for 3-5 minutes on each side.
Add in onions after flipping your hash.
Once the onions are almost done add in the washed spinach and the cooked couscous.
Push everything to the back of the pan and crack an egg once the egg is scrambled mix everything together add salt and pepper to taste.
The second recipe is a lot easier!
Banana and couscous
½ cup cooked couscous
1 medium banana
1 Tab Maple syrup
Mix the couscous and maple syrup and store overnight in the fridge. In the morning cut up the banana and add to the couscous. You can eat it cold or heat it in the microwave for one minute.
Super quick breakfast!
