Sriracha Couscous Stir-fry Bowl


Time: 30 minutes or fewer calories: 400 per serving Serves: 2


I know couscous is not the healthiest of the grains, you could substitute for whole-grain couscous. To keep it on the healthy side there are more veggies than couscous.


⅓ cup couscous

½ cup water

½ half of a small onion

1  cup Mushrooms chopped about 8-10  

1 cup grated carrot (it’s about a medium carrot)

1 cup broccoli chopped  

2 garlic cloves

Salt pepper to taste

2 tsp soy sauce

1 Tab Sriracha

½ tsp or a squeeze of honey

Cilantro on top   

This is super easy.

1 First chop the onion, garlic, mushrooms, and broccoli set aside

2 Grate carrot

3 In a frying pan set to medium heat add oil about 2 teaspoons or as needed.

4 Add onion and cook till it starts to brown. About 5 minutes

5 Add mushroom till they shrink    

6 Add the remainder vegetables stir occasionally let veggies cook for 5-10 minutes

7 Add salt, pepper, soy sauce, Sriracha, and honey mix till uniform in flavor.

8 cook ⅓ cup couscous with ½ cup water in a small to medium pot bring to a boil then set on low. Cook for 5-10 minutes.  

9  Divide up the goods and enjoy!
